- I bought this for my husband who is a sushi chef. It wasn't suited for slicing sashimi for these reasons:
1. It's not long enough and Kyocera only has one size
2. Ceramic knife is thick, not good for slicing sashimi or maki sushi. You want the slimmest possible knife.
Otherwise, it works great.
- This is really a good knife in terms of Quality and Material wise. It recommented for the picky and demanding chef.
