- I have had several bread knives over the years, all good quality, but this is by far my favorite. The steel is exceptionally hard and takes an edge like no other. Great handle, very elegant and ergonomic.



I use this for carving turkey and roasts, large tasks like cabbage and lettuce shredding, it has proven to be very useful well beyond bread duties.



Can't reccomend the Shun knives highly enough, and the Elite line is the best of the best for me. Kershaw customer service for warranty issues is also second to none.

- i looked at a variety of bread knives and this was my favorite. although pricey, i did like the design. most of the knives i looked were super light, which i didn't like. i like some weight. though not as heavy as i would like, it felt good. the knife is extremely sharp. when i took it out of the box, i just brushed the blade against my finger and gashed it. it was barely a touch. it cuts through bread very nicely. you can get super thin slices of french bread/bagettes. no more wrestling and crushing bread. the blade is designed to get minimal crumbs. like anything you invest in, check out a variety of different products before picking one. if you can afford it, it's well worth it. beautiful blade too.

- First and foremost, let me start with a few important notes...



I am NOT a chef by trade- I work in finance. I am simply a cooking enthusiast and I readily admit that my needs are vastly different from those of a culinary professional. I must also mention that while reviews are helpful, the only sure way to know what is right for you is to try before you buy. Luckily, Amazon has a great return policy to make buying online feasible.



One more general word of wisdom- don't buy a set unless you would unhesitatingly buy each and every component independently. Manufacturers have a bad habit of including one or two superfluous items like a tomato knife or three different sizes of utility knife. Common sense says don't pay for the extras you don't need and likely won't use. Don't give into the temptation to buy a set for the pretty block that comes with it either! I've never met a block I liked. I don't like being restricted to the sizes and quantity of pre-cut holes, but even worse- they are havens for dirt and bacteria!! For storage, try a magnetic strip. Why hide those beautiful, expensive blades- show them off and be more hygienic in the process! Almost every manufacturer makes a decent strip, so you're sure to find one that fits your collection and your budget.



Now, let's review this knife...



At $200 it should go without saying, but this knife is sharp... *extremely* sharp. My personal feeling is that all of the high-end knives will give you an adequately sharp blade. The significant differences will be found in edge durability and comfort.



As for durability, when spending this much on a single knife you should expect to get something that will last decades, even a lifetime. The differentiator in durability is all about how often you'll need to hone and sharpen your blades, not whether or not the knife will break. By the way, honing and sharpening are NOT the same thing. In the interest of staying on point, I'll let you do a quick Google search to find out why.



According to the manufacturer, the SG-2 alloy used in the Shun Elite line will hold it's edge for quite a long time. While I've only owned the bread knife for a week, I've had the Chef's and Paring knives for a couple of months now and I rarely need to hone them. So far they are definitely living up to the expectation set by Shun.



Last but not least, we consider comfort. This is, of course, something you'll have to feel for yourself, but here are a few of my thoughts. If they sound like what you'd be looking for you might have a match.



First, what I *didn't* like about the competitors I tried:



Global: Weight & handle length. For me, the Global was just too light. It is a proverbial feather. This would be a huge benefit if I were chopping, dicing, and mincing for hours every day... but I don't. I'm fairly strong and just found the lack of heft disorienting. The handle is also a little on the short side for my big hands, which left the end of the handle bumping into the inside of my palm. Lastly, the stainless handle was slippery when wet.



W?sthof & Henckels: Weight & handle shape. Both of these German-made knives are battle axes. Wielding a W?sthof or Henckels, I felt certain that I could defend my kitchen from raging barbarian hordes. They both seemed to lean toward power/brute force at the expense of agility and nimbleness. I also felt that the handles were quite boxy and lacked any elegance to their touch. For what it's worth, the Henckels was a little smoother than the W?sthof, but still boxy.



Shun Classic: Actually I loved the Classics as much as the Elites and had a hard time deciding between the two. The Classics have a D-shaped handle the really helped the blade stay steady in my hand. Since I'm a lefty while my wife is a righty, the clincher was that the Classics came in either right OR left handed while the Elites are ambidextrous. For those of you who don't care about ambidexterity, consider that the SG-2 steel of the Elites is supposed to be even better than the fabled VG-10

used in the Shun Classics.



Ceramic knives: These are fairly new on the scene and boast super sharp edges that stay sharp longer than any metal blade. My complaint is simple: they break and/or chip easily. It does no good to have an edge that only needs to be maintained once a year if that edge chips or the tip breaks.





Now for what I liked about the Shun Elite...



The handle is curvaceous, contouring to the peaks and valleys of my fingers and palms. The knife also felt perfectly balanced in my hand. The weight was neither too heavy nor too light. I felt like I had enough force available to chop through anything, yet maintain grace and control while doing so.



In the end, I have been nothing but highly pleased with my Shun Elites. I absolutely recommend putting them in your list of knives to try.

- I have been waiting to buy top end knives for years now. Finally Amazon had such a great price that I took the plunge! These are a great set. Elegant in both looks and utility. I justify the price with the comfort that these are a lifetime purchase. with proper care I may well have these knives 20-40 years! My Grandmother had hers at least that long and I look forward to that kind of a relationship with my Wustof's.



Super sharp and very hard steel keeps an edge well. You will love the weight and balance of these knives.

A close look at the shape of the handles will show why. Wusthof Classic and Grand Prix knives - along with the knives of most other manufacturers - have a traditional handle shape, thicker in the middle with a straight back. That provides a good strong grip if your hand is the right size - and they are pretty good for me, since my hands are of average size.



The gently curved shape of the Culinar handles, though, while providing as good a grip, allows more control over the cutting action and the precise angle of the blade. The convex back of the hilt fills out the palm, providing more contact for a more secure hold, while the subtly curved bolster facilitates a forward hold for chefs who use a fast rocking cut. The taper in the handle makes it a perfect fit not just for average size hands, but for any size hand: a smaller hand will stay toward the bolster, where the handle is thinner, but a bigger hand will cover the handle further back, where it is thicker.



This particular set is an excellent all around set. Two pieces are not knives: the block and the sharpening steel. The block is handy for easy storage and drying of the knives after washing, and has extra slots for two additional knives and a hole for kitchen shears. The steel is essential for occasional honing of the knives to keep them sharp. The tests I've seen on the internet show Wusthof steels to be more consistently hard than those from their competitors - important to ensure that it is the knives that are honed, rather than the steel that wears smooth.



Of the knives, the 20 cm (8") chef's knife is the one most used - perfect for all a manner of cutting. The 20 cm carving knife is used to serve roasts and birds after they leave the kitchen; the bread knife's serrated edge, also 20 cm in length, cuts the crustiest loaf.



The other two knives are a 9 cm (3.5") paring knife and a 12 cm (4.5") utility knife. The paring knife, while small for other tasks, is the perfect length for, well, paring - peeling potatoes and other tasks which involve cutting something held in the other hand, where a short blade helps to speed the work while avoiding injury. The utility knife is useful for odd jobs on the slimmer vegetables and other small objects.



This is an excellent knife set for the home chef. The high list price of this set only reflects the quality of the knives. - I have been using W?STHOF for years and the quality never disappointed me. This product comes with Classic IKon series, which I love. What I always liked about Classic Ikon is that knives are not heavy. Other Japanese brands I have used were too heavy and got some workout out of using them. I liked how it is exceptionally sharp. Handling was excellent. It fit my grip perfectly. I use it on average of 4-5 hours a day and I can notice when knife does not perform as expected. But not on this one.

The only problem I had was with the knife block. When it arrived first, it had a few chips all edge and the front of the block. The vendor was kind enough to send me another one directly from W?STHOF distribution center but that one was even worse.

- I have been using this set of cutlery for five years and it has been great. The edges have remained sharp with very little sharpening and the wood handles have maintained their beauty. I do not place them in a dish washer because of the wood handles and an occasional coating of gun oil keeps them in fine shape.

- I have been using an 8" forged German knife for a long time in a New Orleans restaurant and found myself using my co-workers 10" more often than my own so I decided to try something new. I wasn't aware when I bought this knife that it is stamped not forged so when I first received it I was a little disappointed in how it felt. It's very light and the blade flexes a lot more than I am used to giving it a cheap feel. After two weeks worth of hard work though I have become accustomed to it and wouldn't go back. The blade has remained sharp and kept it's true edge with only minor steeling. I finish with my prep and am ready for more due to the light weight and great balance. This is a surprisingly high quality knife that I would recommend to anyone.

- I have been through a number of cutting boards because I leave it next to my sink and use it constantly. I need a deep one because I am tall and the standard countertop is too low for me resulting in backaches. A couple of very expensive, made-in-Vermont boards have split on me - probably because of moisture. I have had the Big Kahuna for over a year now and it is like new. I have used it daily and it shows no sign of wear. The feet keep it up off the counter so moisture isn't a problem. I highly recommend this cutting board.

- I bought this for a friend of mine as a wedding gift. They had a small, worthless cutting board on their registry, so I decided to buy them a legitimate piece of kitchen equipment. While I have not personally used the cutting board, I had what you might call "gifters remorse" upon wrapping it up for my pal. I had the urge to keep it and buy them the crappy one they asked for. The thing is just massive.



If you've spent any time in the kitchen, you are well aware of the numerous benefits of a large, heavy cutting board (and a good knife). Small, flimsy cutting boards slide around, warp, things fall off the side, they jump when you really pound them, spilling juices and such all over the place....Not so with cutting boards of this size and weight. Whether you're cracking lobsters, chopping onions, or deboning chickens, a sturdy cutting board such as this will make your life in the kitchen infinitely easier. I should know, I'm a classically trained french chef. Anyway, spend the cash and get yourself a real cutting board. Just make sure you measure your countertops first.

- This is a well crafted and very attractive cutting board. It arrived in perfect condition, and we let it soak overnight with a liberal covering of mineral oil which you can get from any pharmacy or department store (oddly enough) in the laxative section. The minearal oil (food grade) will help keep the wood from drying, cracking, and splitting.



This board looks great, but it's HUGE! When we first placed it on our counter (marble slab island), we thought, "what have we bought?". We like the large cutting area, but with the legs, it sits several inches high on the counter. I considered trying to remove the legs to drop it an inch and let it sit flat on the counter, but the legs were very sturdily attached. Rather than mess up this beauty with my hammer, saw, and vice-grips, we decided to see if we get used to the height after a week or two. (Kind of like our first big-screen TV -- it seemed like a monster when we first placed it in the room, but quickly seemed 'normal' size.)



This is a finely crafted board and I recommend it if you have a good-size counter. We've gone through several cheaper boards in the $50 range, and they didn't last. This guy seems like it will be around for a long time.

- I have been searching for the perfect cutting boards all my adult life. These come close. If they would leave the hole for the handle off, I would say they would come even closer. It takes up valuable cutting space as far as I'm concerned. The grips on the back side prevent the board from sliding all over and I LOVE that feature.



I also wish they came out with a small size...say 5 X 8 or so...for the little, quick jobs like slicing lemons. Would also buy a larger size if available. I usually have 3 boards in my kitchen.

- I have a smaller version of this board and love it. I got this for my daughter. It works but it's warped.

Would not buy again. Too much $$ for something defective and a pain it the a@@ to send back, so I'll keep it.

- I first purchased the smaller one and felt fortunate that I read the reviews and knew to not put it in the dishasher. By the way, my smaller one is the 'red' color which is NOT red. It is red on the bottom half with the grippers, but the top is a much darker color.



So, fast forward to when I decided I wanted the bigger one too. I purchased the grey one (incidentally, I also received the 'red' one initially and had to return it in lieu of the grey that I actually ordered so somebody at targ must be color blind...got the second one directly from amazon in the correct color) and the color is good, if you like grey. But, and it's a BIG but, this board is warping and I have never put it into the dishwasher. I wash it by hand with dish soap and hot water, then I dry it and lay it back on the counter. It is totally bowed after less than two months.



What a shame as, otherwise, I would love this board! My smaller one has not bowed and it has been treated the same, only for a longer period of time.



So, if you don't mind the bowing, it is otherwise a great board to have. I am terribly disappointed in paying thirty dollars for a board that bows in the middle.

- I have been researching knives for awhile and chose the Wusthof because of the product description. After I received them, I wish I had gone with the more popular knive sets because although they are sharp, they are also light and the handles look cheap. I am still debating if I want to send them back for a different set. I would not recommend them if you want the complete package of sharpness, weight, appearance.

- We purchased these after friends recommended Wusthof over Henckels because 'Wusthof doesn't make a cheap knife.' Well, I know these are the bottom of the line, but they where disappointing. The knives where flimsy, light and felt & looked cheap. We ended up returning them and spending a bit more money for a set of Henckels where were forged instead of cut, resulting in a higher quality knife (at the same price, the Wusthofs where still laser cut). It seems at this price you'd be better off spending a bit more money and looking at a different set.

- I have been looking for a knife sharpener that is a quality piece of equipment that would put a very good edge on our knives. I could not find anything at the local kitchen or hardware stores excpt for the hand held slide sharpeners, which I could not get to work satisfactorily, the new edge would not hold. The EdgeSelect Professional Knife Sharpener was a good choice. It has quality guides and sharpening stones and is a counter top (not hand held) tool. I would not suggest anything less, but might go for the next model up.

- I have always sharpened my knives manually on a stone and never believed that an electric sharpener could get my knives as sharp as I required them to be. Boy was I wrong. After reading reviews about electric sharpeners I decided on the Chefs Choice 1520. The vender that I purchased it from was very prompt in shipping this to me and it arrived in excellent condition. This sharpener exceded my expectations. It is very quiet, and with just a few passes, the edge on all of my cutlery, even the longest filet blades, was razor sharp. Something I didn't believe to be possible. The motor is very strong and doesn't slow down even on my heaviest blades, while sharpening. So far I've only needed to sharpen my knives once as they are holding their edge, after daily use for about three months now. I would definately recommend this sharpener to friends.

- I have a very expensive set of Henckel's knives and was spending a fortune every six months to get them professionally sharpened. I was hesitant to buy an electric sharpener since I had heard that wasn't good for these knives. However, more research into the subject proved me wrong, and I chose to buy this product. I've only used it once so far, but I think it's a good buy for the money. It sharpened the knives very well and almost effortlessly. I do believe, however, it will be necessary to sharpen them more often than when I had them done professionally, which isn't a big deal now.

- The model I required was the Australian model, not the 110 volt model for the USA.

- This is one of the best Knife sharpeners I have ever owned. My knifes are so sharp that my friends are asking me to sharpen theirs. I love it.

- I have a set of high end Jean Dubost Laguiole knives and bought the Rosewood versions of these knives, thinking they would stack up. Not so. The quality of these SCIP brand knives are decent at first glance, but that's about it. The detailing is just not there, neither is the quality otherwise. These are not the French made / hand detailed kind found otherwise, this set is mass-produced in China. They look nice at a glance but do not compare to the French manufacturers' quality

- I have a hard time believing that someone who has actually used both Wusthof's Culinar and Classic knives would dismiss the differences as merely "looks". Having recently replaced my entire collection of Wusthof Classics with Culinars, I can say the difference goes much farther. The difference was obvious to me the first time I picked up a Culinar knife: it felt like the handle molded itself to my hand, as if the knife was an extension of myself, rather than a mere implement.



A close look at the shape, rather than just the color, of the handles will show why. Wusthof Classic and Grand Prix knives have a traditional handle shape, thicker in the middle with a straight back. That provides a good strong grip if your hand is the right size - and they are pretty good for me, since my hands are of average size.



The gently curved shape of the Culinar handles, though, while providing as good a grip, allows more control over the cutting action and the precise angle of the blade. The convex back of the hilt fills out the palm, providing more contact for a more secure hold, while the subtly curved bolster facilitates a forward hold for a fast rocking cut. The taper in the handle makes it a perfect fit not just for average size hands, but for any size hand: a smaller hand will stay toward the bolster, where the handle is thinner, but a bigger hand will cover the handle further back, where it is thicker.



The three knives in this set are good knives to start with. The chef's knife and the paring knife are needed in any well equipped kitchen; the "sandwich knife" can substitute for any of three or four other special purpose knives.



The Wusthof classic chef's knife is available in several different sizes; the 8" (20 cm) blade size works well for almost any cutting task in the kitchen. There are times when it feels like a larger size might work even better, such as when using a rocking cut on a large vegetable, but the 8" always seems to be sufficient in the end.



Paring - for example, peeling potatoes - is a more specialized task, for which a specialized knife is really superior. The 3.5" (9 cm) blade length in this set may seem short, but it's short for a reason. Often while one is using the paring knife in one hand, one is holding the object being cut - such as a potato one is peeling - in the other. The short blade length makes it easier to avoid stabbing oneself while maneuvering both the knife and the object.



The 6" (16 cm) "sandwich" knife can substitute for a variety of other knives. For example, it can be used for utility tasks that require more than the 3.5" blade length of the paring knife - which is to say, most utility tasks - if the cook doesn't already have a 4" or 4.5" utility knife. It can also be used, in a pinch, when what the cook really wants is a second chef's knife - for example, to cut fresh vegetables for a salad when it wouldn't be hygienic to reuse the big chef's knife that was just used on raw meat. Finally, it can be used to slice and serve smaller roasts, for those who do not have a carving set.



One note: a sharpening steel, such as the W?sthof Culinar 9-Inch Chrome Sharpening Steel, is an important complement to any set of quality knives. A cook who does not already have a sharpening steel will need one to go with this set - or if your budget is limited, you may consider a steel with just the Wusthof 4589/20 Culinar Chef's Knife 8-in. instead. For a cook who has a sharpening steel, however, this is the perfect starter set.

- I bought the 3 piece Started Set and the 8" bread knife and they are the only knives that I use and I feel, the only knives that one needs in the kitchen.



They are a joy to use and are truly beautiful to look at.



Okay, to be honest, at first I choked at the cost but I love to cook and would buy them again in a heart-beat.

- There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Culinar line is an all stainless steel look, rather than a black handle. Although the picture and some descriptions want you to think this is a single piece knife, be advised that the hand is a separate piece of stainless steel molded onto the tang. I personally prefer the handle of the Grand Prix and Classic, because the grip is surer for me, but this is, to some extent, a matter of personal preference. This series "looks" more professional to some (like a Viking stove).

This set includes an 8 inch chef's knife, a 3 ? inch paring knife and a 6 inch sandwich knife.

The 8 inch chef's knife, is a great knife. Wusthof offers four sizes of chef's knives in the Classic line, 5, 6, 8 and 10 inch. For most home cooks, I think the 8 inch knife is the best choice. The 5 and 6 inch are a bit small for bigger jobs, but the 10 inch is too big for most jobs. While the 8 inch isn't perfect for all uses, if you are only buying one size chef's knife (and most people only buy one), this is the one I would recommend.

As for the 3 ? inch paring knife, this knife falls into the category of overkill for me. Most cooks will get by just fine with the 4 ? inch utility knife. There is really no notable difference in size for the vast majority of applications between the 3 ? inch paring knife and the 4 ? inch utility knife. I prefer the 4 ? inch utility knife, but the 3 ? inch paring knife will do the trick.

I have found very few uses for the 6 inch sandwich knife. I prefer the larger size of the chef's knife or the smaller 4 ? inch utility knife. This knife is just the wrong width and length for most tasks.

This set is a good deal; however, if compiling a set myself, I would include the chef's knife, the 4 ? inch utility knife, and the 9 inch bread knife. Judge for yourself.
